I love pink gin! I never thought I’d use it in a recipe, and now I can’t stop! Of course, pink gin is nice in cocktails but I have to say, I love this no bake pink gin cheesecake with a passion. I hate having to faff about with recipes and I don’t like putting the oven on anymore considering it costs a small fortune to run these days. Which is why I like this no bake cheesecake.

I won’t lie, this recipe does take time but it’s well worth it once it’s done. It doesn’t need to look uber pretty either because you can just decorate it a little with fresh or frozen fruit and then dig in. This easy no bake cheesecake is the perfect solution for gatherings, comfort food or just trying your hand at a little baking and there’s nothing wrong with that.

One of the things I love about this unbaked cheesecake recipe is that it doesn’t cook out the gin. I’ve made loads of recipes where I’ve had to double up on the gin measurements otherwise it gets cooked away. With this no bake gin cheesecake the gin isn’t going anywhere! This is why I actually use two different types of gin and not just your standard Gordon’s Pink Gin!

No cook cheesecakes are the new thing in my opinion. I know once upon a time you would have to chuck your cheesecake in the oven, don’t get me wrong they’re still yummy but it’s very time consuming. If you lead a busy life as I do, you need the best no bake cheesecake, which is this one.

There are loads of no-bake cheesecakes out there, I know I should only really be talking about this amazing gin no-bake cheesecake but I’ve made this Lindt chocolate no bake cheesecake recipe loads of times and if you’re in the mood for a no-bake chocolate cheesecake, try it out!

I’m not sure when no-bake cheesecake recipes became the thing to make but I’m glad they did. I can get one of these done in a day and have it to take into work or share with the family the following day. The best part is that everyone loves it and asks for it again, you can’t get a better compliment than that!

The cream cheese, double cream, icing sugar, biscuits and butter really don’t matter if I’m honest. I get mine from Aldi and I’ve never had a problem with them. The only thing I will say, make sure you have a decent electric whisk when the time comes to whisk the double cream or your arm will fall off.

In the pictures, you’ll be able to identify that I’ve only swirled gin through the filling and not added it to the mixture. I use Opies berries in gin for this. I strain the juice and then mix some of the juice into the mixture. I find that the Opies juice has a much darker colour and I also mix it with the icing I put on top, which is just double cream pipped with the juice in it.

That being said, this pink gin cheesecake does have more gin in it other than a little berry juice. I mix Gordon’s pink gin into the mixture. As I said before, this is a no-bake cheesecake recipe which means the gin doesn’t cook out. If you’re tempted to add a little more than the recipe suggests I’d hold off unless you like it very strong. I should also say that you need to add the gin to the double cream before you mix it with your whisk.

The no bake cheesecake filling can be a little plain unless you add some flavouring. That’s why I decided to put the gin into it. It just means the no bake cheesecake filling has a nice flavour to it and you’ll know the gin is there.

Oh, and it doesn’t matter if you give your cheesecake a crust or not, I’ve done both and either way, they turn out amazing. It’s all personal preference.

I used a lot of equipment for this recipe, won’t lie. It might be a no bake gin cheesecake recipe but that doesn’t mean I can do it all by hand. Don’t worry, I won’t put a fridge on the list although it did need around 6 hours in the fridge for the mixture to set. I just assume everyone owns a fridge? This pink gin cheesecake is great for giving you an after dinner buzz, it’s great comfort food and it’s a super naughty treat. It isn’t healthy and I would only look at the calorie count for a slice if you hate yourself. I mean life’s for living right? As long as you don’t eat the whole thing I’m sure you’ll be fine.

I would also like to point out that for the topping all I did was add some frozen raspberries and some chocolate sprinkles. It’s nothing fancy but as you can see with this pink gin cheesecake, it makes the world of difference. The decoration isn’t needed as much on the no bake cheesecakes with the crust but you can still give it a go.

Equipment

  • 20cm/8inch Springform Cake Tin
  • Hand Mixer

Ingredients
  

  • 250 g Hobnobs
  • 150 g Butter
  • 375 g Cream Cheese
  • 250 ml Whipping Cream
  • 1 tsp Vanilla Extract
  • 6 tbsp Juice from – Opies Red Berries with Pink Gin
  • 50 g Frozen Raspberries
  • 3 tbsp Caster Sugar

Instructions
 

  • Empty the Opies Red Berries in a sieve over a bowl. You need to keep the juice.
  • Put the biscuits into a food bag and smash them with a rolling pin until they are all broken up into crumbs.
  • In a bowl, add the butter and put it into the microwave until it is melted. This should take 2 – 3 minutes.
  • put the biscuit crumbs into a bowl, and pour the melted butter on top. Once it is fully combined, put it into the cake tin.
  • Make sure you have pressed the biscuit mixture into the bottom of the cake tin using a spoon. Now put this in the fridge to firm up.
  • In a bowl, add the cream cheese, vanilla extract and sugar and mix until it is smooth.
  • In another bowl, add the whipping cream and whisk until the cream becomes thick.
  • Mix ¾ of the cream into the cream cheese mixture and mix until it is fully combined.
  • Now add in 4 tbsp of the juice from drained fruits. Combined this slowly to make a ripple in the cream mixture.
  • Remove the cake tin from the fridge, add the cream mixture to the cake tin and smooth out the top of the cheesecake.
  • For the rest of the cream, add 2 more tbsps of the juice to the cream and mix until it is fully combined. Add the cream to a piping bag and pipe swirls on top of the cheesecake.
  • Place the cheesecake back into the fridge to chill for 5 hours or overnight.
  • Serve and enjoy.
