I love making vegan recipes because I know everyone can enjoy them! This vegan chickpea soup recipe is no exception to that rule! With a low calorie soup like this you could even have more than one portion, just don’t eat the lot and remember to share with friends and family!

Equipment

  • Soup Maker

Ingredients
  

  • 400 g Mixed Beans (Tinned)
  • 400 g Chickpeas (Tinned)
  • 400 g Chopping Tomato (Tinned)
  • 2 Medium Onion
  • 2 Sticks  Celery
  • ½ Lemon – Juice and Zest
  • 1 tsp Cumin
  • 1 Vegetable Stock Cube
  • 700 ml Water

Instructions
 

  • Drain the mixed beans and chickpeas, add them to the soup maker.
  • Add the tomatoes, cumin, stock cube and water to the soup maker.
  • Dice the celery and onion really small and add to the soup mater
  • Cook on chunky setting for 28 minutes or until the vegetables and beans are all cooked through.
  • Serve in a bowl with crusty bread.
