I love making cookies and I love them even more when they’re vegan cookies. I’ve made these vegan honeycomb cookies a few times, and they’ve gone down a storm each time. I won’t lie, the honeycomb can be a little tricky to make but they’re so worth it and taste delicious. If you’re looking for a vegan cookie with amazing flavour, this has to be one you’ve got to try.
The one thing I’ll say now about these honeycomb cookies is to make sure you check all of the ingredients beforehand. These easy vegan cookies are great and this recipe will make on average 12 cookies but it depends on how big you make them. I know some people like to have huge cookies whereas other people like to make them more bite-size so people can enjoy them and not feel so guilty afterwards. How big you make these vegan honeycomb cookies will also change the bake time so keep that in mind when you make them.
Vegan Honeycomb Cookies Recipe
Equipment
- Mixing Bowl
- Baking Sheet
Ingredients
- 250 g Plain Flour Sifted
- 125 g Softened Butter
- 125 g Caster Sugar
- 50 g Soya Milk
- ½ tap Baking Powder
- 50 g Honeycomb roughly crushed
Instructions
- Preheat the oven to 180°C/350°F.
- Place the softened butter and sugar into the bowl of a mixer and beat until light and fluffy.
- Add the sifted flour and baking powder and beat on a low speed until just combined.
- Tip in the crushed honeycomb and beat for about 10 seconds.
- Place balls of dough onto a non stick silicone baking tray and flatten.
- Bake for about 10 minutes or until the cookies are golden.
- Leave to cool and then enjoy!
