These easy vegan cookies are great and this recipe will make on average 12 cookies but it depends on how big you make them. I know some people like to have huge cookies whereas other people like to make them more bite-size so people can enjoy them and not feel so guilty afterwards. Vegan Honeycomb Cookies Recipe
- Mixing Bowl
- Baking Sheet
- 250 g Plain Flour Sifted
- 125 g Softened Butter
- 125 g Caster Sugar
- 50 g Soya Milk
- ½ tap Baking Powder
- 50 g Honeycomb roughly crushed
- Preheat the oven to 180°C/350°F.
- Place the softened butter and sugar into the bowl of a mixer and beat until light and fluffy.
- Add the sifted flour and baking powder and beat on a low speed until just combined.
- Tip in the crushed honeycomb and beat for about 10 seconds.
- Place balls of dough onto a non stick silicone baking tray and flatten.
- Bake for about 10 minutes or until the cookies are golden.
- Leave to cool and then enjoy!
