I LOVE Christmas, you might have been able to tell from some of my content. It’s my favourite time of year, I get 90% of my Christmas shopping done in January and I’m planning or buying stuff for Christmas all year round. I’m sure there are people out there that love Christmas more than me but I’ve not met them yet and all my friends and family are sick of me talking about Christmas all the time, that’s why I love making these lush Christmas recipes all year long.

This vegan Christmas mincemeat loaf cake recipe is just one display of how much I love Christmas and I want as many people as possible to enjoy it as much as I do, is there anything better than Christmas recipes? Well maybe presents, spending time with the family, Santa and seeing the look on your loved ones’ faces when they open something they either didn’t expect or love.

When it comes to Christmas vegan recipes, I’m always on the lookout to make more. I want as many people as possible to be able to eat my Christmas recipes and that’s why I try to make as many as possible totally vegan. Vegan Christmas desserts have been something I’ve been wanting to make more of for ages now. I know that a lot of people like Christmas dinner the most but for me it’s the Christmas desserts that make the day. I will always eat too much Christmas dinner and have to wait forever for pudding but in my opinion, it just makes it all taste better the longer I have to wait. Plus, you can never beat a good Christmas trifle, right? I’ll be making a vegan Christmas trifle real soon so keep an eye out!

This vegan fruit cake is something you’ll want to be making at Christmas time. I feel fruit cake is one of them foods you could probably eat all year round but it’s a lot nicer around Christmas when everyone is feeling festive and happy, or is that just me? When it comes to Vegan Christmas food, this vegan mincemeat loaf cake has to be made and I’ve made it every year for the last 4 years now!

If you switch some of the ingredients for gluten-free even more people will be able to eat it but I am yet to make a gluten-free Christmas cake so could someone please remind me at some point? After all, I love vegan Christmas baking but I’ve recently gone Gluten-free so you’ll see more of the recipes soon starting with a slight alteration to this vegan mincemeat cake.

Christmas Vegan Mincemeat Loaf Cake Recipe

Vegan Mincemeat Cake – A perfect cake for Christmas, filled with all of those flavours and smells.

Total Time 2 hours 10 minutes

Equipment

  • Stand Mixer
  • Silicone Loaf Tin
  • Silicone Spatula
  • Wire Rack

Ingredients
  

  • 225 g Self-Raising Flour
  • 140 g Butter
  • 140 g Dark Soft Brown Sugar
  • 50 ml Soya Milk
  • 85 g Mixed Fruit
  • 450 g Mincemeat
  • 2 tsb Mixed Spice

Instructions
 

  • Preheat oven to 160℃/320℉/Gas 3.
  • Put all ingredients into a bowl and mix thoroughly.
  • Turn into the prepared tin, bake for 2 hours. (Check with skewer/cocktail stick to ensure it comes out clean). Leave in the tin for about 15 minutes then transfer to a wire rack to cool completely.
