So I’ve been going Gluten-Free for a while now since I found out that I pretty much can’t eat it without reactions throughout my body. That’s why you’ve seen an increase in amazing and quite frankly yummy gluten-free recipes, just like this gluten-free banana bread! This was a simple recipe to be fair and if you’re like me and want a nice and easy banana bread, this is the one for you.

Banana bread is nice but I much prefer making it a gluten-free chocolate banana bread, it gives it a lot more flavour and it isn’t boring. I know a lot of gluten-free bakes can be a little boring, dry and unexciting but that’s not what you get with this recipe. You get a nice moist banana bread and everyone is going to love it that’s for sure.

I personally love banana bread but since going gluten-free, it’s not been that easy to make. I think the thing people need to remember is that the bread and products that you buy in supermarkets can be terrible, they’re dry and not nice at all. Whereas, if you’re home baking you have the chance to make amazing, moist gluten free recipes that won’t mean you need a drink every two seconds when you’re eating.

The great thing about making gluten-free banana bread is that you’re making a loaf of healthy banana bread as well. You can switch the ingredients for gluten-free and vegan ingredients which means the sugar content will be less and a lot healthier. Your recipe is how you make it so keep that in mind. It’s fine to switch ingredients as long as you ensure they’re gluten-free.

Is Banana Bread Gluten Free

Normal banana bread is not gluten-free. A normal banana bread recipe contains flour which is not gluten-free.

This recipe includes gluten-free self-raising flour, you can get this from most places or if you have a preference on what gluten-free flour you like, you can buy some online. Why Is gluten Free Bread So Awful

There are a few reasons why gluten-free bread can be perceived as “awful.”

  • Gluten is a protein that gives bread its structure and elasticity. Without gluten, gluten-free breads can be crumbly, dense, and dry. This is because gluten helps to bind the ingredients together and give the bread its characteristic chewy texture. Without gluten, bakers have to use a combination of other ingredients, such as xanthan gum, guar gum, and psyllium husk, to try to replicate the effects of gluten. However, these ingredients can sometimes give gluten-free breads a gummy or rubbery texture.
  • Gluten-free breads often have a strong, eggy flavour. This is because gluten-free flours often lack the flavour and aroma of wheat flour. To compensate for this, bakers may add extra eggs or other flavourings to gluten-free breads. However, this can sometimes make the bread taste artificial or overly sweet.
  • Gluten-free breads can be expensive. This is because gluten-free flours are often more expensive than wheat flour. Additionally, the production of gluten-free breads can be more labour-intensive, which can also drive up the cost.

I wanted to talk about the recipe a little bit, with gluten free recipes it’s always important to make sure that the ingredients you use are still gluten free. I know some brands say that their ingredients are gluten free and then they’ll change it without letting people know. If you have a severe gluten intolerance that can be life threatening, always check the label. Some packaging will say “may include gluten” because the product is made in the same factory with other products that contain gluten, it’s up to you if you want to chance it but I don’t.

When I’m baking I will always use Free gluten-free products. They’re the best gluten-free products I’ve found so far but I am open to trying new ones. You can get their products from most supermarkets or order them online. They are a little bit more expensive but I found their self-raising gluten-free flour worked great with this gluten-free chocolate banana bread.

Ingredients
  

  • 190 g Gluten-Free Flour
  • 21 g Cocoa Powder
  • 50 g Dark Chocolate Chips
  • 3 Bananas Mashed
  • 85 g Coconut Oil Melted
  • 85 g Honey
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • ¼ tsp Salt

Instructions
 

  • Preheat your oven to 176℃ / 350°F. Grease a 9×5-inch loaf pan or line it with parchment paper.
  • In a large mixing bowl, combine the mashed bananas, eggs, honey, melted coconut oil, and vanilla extract. Mix until well combined.
  • In a separate bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Gently fold in the dark chocolate chips or chopped dark chocolate.
  • Pour the batter into the prepared loaf pan and spread it out evenly.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the banana bread from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
